Smoked Chicken with Cauliflower Rice & Broccoli
Smoked chicken thigh over cauliflower rice sauteed with onion and jalapeno, roasted broccoli on the side.
Instructions
- Heat 1 tbsp butter or bacon fat in cast iron over medium-high. Add 2 cups frozen broccoli florets straight from the freezer. Do not cover. Season with salt, pepper, garlic powder. Cook 10 to 12 minutes tossing occasionally until edges char and it is tender. Transfer to a plate and cover to keep warm.
- In the same pan, add 1 tbsp bacon fat or butter. Saute 1/4 diced yellow onion and 1 diced jalapeno over medium for 4 to 5 minutes until soft.
- Add 1.5 cups frozen cauliflower rice. Toss with the aromatics. Cook 5 to 6 minutes stirring occasionally until hot and tender, any moisture cooked off. Salt to taste.
- Reheat 6 oz sliced smoked chicken thigh briefly (skillet, oven, or microwave until warmed through).
- Plate cauliflower rice, top with sliced smoked chicken, broccoli alongside. Squeeze of lime if you have it.
